Green tea ice cream

Love how easy it was to make one of my favourite ice creams, green tea ice cream. Try using the the best quality matcha powder you can afford. This make a world of difference to the final result. The texture is slightly creamy, with a taste that is slightly sweet with a delightful green tea bitterness.

Make sure you cool the mix down over ice before putting it into the ice cream maker
Green tea ice cream

Ingredients

1 ¼ cup Milk

¾ cup cream

3 tbsp matcha powder

100g castor sugar

Pinch salt


Method

In a pot, heat up milk, cream, sugar, salt on medium heat. As steam is coming off the liquid, add sifted matcha powder, mix well. Do not boil the mix. Once heated, place in a glass bowl and on top of a large bowl of ice or iced water to cool down. Once cooled, place in the chilled KitchenAid ice cream bowl and churn on speed 2 for about 25 minutes. When done, place in an airtight glass container and into the freezer. Chill the glass container in the freezer first to avoid too much melting of the made green tea ice cream.
