Veggie skewers

With tahini and honey glaze

Vegetable skewers with tahini and honey glaze

Makes 8 skewers


4 Mushrooms buttons

8 Baby tomatoes

1 Zucchini, large

160g Halloumi cheese

8 Olives, pitted

1 tbsp tahini

1 tsp lemon zest

1 tsp thyme leaves

2 tbsp virgin olive oil

2 tbsp honey

Sea salt to taste


Prepare the vegetables by cutting them into 2cm thickness. Leave olives and baby tomatoes whole. Cut halloumi cheese into 2cm thickness. Using either metal skewers or bamboo skewers, skewer a selection of the vegetables and halloumi cheese.

To make the glaze/marinade, combine the olive oil, lemon zest, tahini, sea salt, thyme and honey in a small bowl.

Heat a cast iron grill and brush with olive oil and butter. Sear skewers on both side. Brush on marinade before turning. Sear for approximately 3 minutes on each side. Serve immediately.

These skewers are perfect as a starter for any dinner party or prepared for your next bbq.
